Eating From the Garden

Almost every morning I head out to the garden, take a look around, see what needs to be picked, and plan dinner around
what ends up in my basket.


I saw a cucumber or two.


We picked a basket full of string beans on Sunday, so there weren't any more ... yet.


Imagine my surprise when I looked carefully and gathered a decent-sized zucchini and ten cucumbers.
Now, what to do with them?


After a few hours in the kitchen, they ended up as cucumber salad (really just sliced cucumbers in vinegar, but my grandmother
always called it cucumber salad) and plenty of cucumbers spears for me to dip in 1000 island dressing.


I grated the zucchini and made a crustless zucchini quiche that honestly smelled so good I could barely stand to wait until it cooled.


We also had string beans and Napa cabbage salad for a really delicious dinner last night. I did a few sausages on the grill for John, but with vegetables this good and varied, who needs meat? Not me, and I'm looking forward to eating from the garden a lot more this week.

  1. Delicious!!! The quiche looks wonderful...but Fletch HATES zucchini. Colin picked a bunch of cukes from his garden and is bringing us a jar of pickles tomorrow!!

  3. Someday I'm going to have a garden! Our current house is in total, deep shade. Your quiche looks so yummy!

    1. Thank you! We've only got one place in the yard that's sunny and it's right next to our neighbor's huge walnut tree which wreaks havoc on some things we try to plant, but it's still a good thing. Here's hoping you get your garden someday!

  5. I'm always good with a meatless meal, too, but Dale is like John and thinks it's not dinner if there isn't meat! Your vegetable garden is bountiful!

  6. That quiche looks wonderful...what a great way to use zucchini! Later today, I will be preparing some cold meals from Farmer's Market veggies so I don't have to cook during the heat wave.

    1. I'm envious of your first tomato! I probably won't have tomatoes for a couple weeks, but I've got my mayo and bread ready for the first tomato sandwich!

  14. Mmmm. Quiche! This is the time of year that I always wish I was more of a gardener. My grandmother's version of Cucumber Salad included tomatoes and was stirred together with mayonnaise instead of vinegar, along with a little salt and plenty of pepper; it didn't keep very well, but that wasn't really ever a problem. It's still one of my favorite summer things!
