Three on Thursday: The Zucchini Edition

I'm joining Carole and friends for Three on Thursday: the Zucchini Edition. We are obviously eating from the garden, and here's what was for dinner last night.

1. Stuffed Zucchini


2. Kolokithokeftedes (aka Zucchini Fritters) with Tzatziki Sauce

I thank Vicki for this recipe every time I have a glut of zucchini and cucumbers. It's delicious!

3. Zucchini Bread 

This fancy version (the bundt pan makes it fancy) was going to be for our neighbor, but then John and I each had a slice for dessert. Next time, Ralph!



We're not vegetarians, but we sure are eating like it this week.

  2. I just love stuffed zucchini! And those fritters look amazing! (My garden had a bright note this morning where there were finally enough beans for a meal FOR TWO!!)

  7. Zucchini fritters sound like a recipe I should try. The cake looks delicious. I can see why you and your husband needed a slice. I have stuffed zucchini on the menu this week. I stuff them with a mushroom, onion, red pepper, vegan sausage, bread crumb mixture and top it off with Parmesan. It's a great vegetarian dish.

  8. Oh, I think we have a candidate for stuffed zucchini on the counter! It's definitely time for fritters, and it's been ages since I made a cake or even bread. Yummmmm. (I think I'm hungry.)

  9. Giving away our zucchini is our favorite way of fixing it.:) Actually, when we pick them at a perfect size we love to grill them for our vegetable portion of dinner. The bakery I patronize loves to see us walk in the door with our arms loaded with zucchini. That means they can shred and freeze what they need to get them through the winter.
