Old Dog/New Tricks

This old dog learned a couple of new tricks this weekend. I wanted to make the fresh ginger cake I wrote about on Friday but wasn't looking forward to peeling and slicing the knobby hunk of ginger I needed. A few minutes on the internet gave me a couple of the tricks I needed. The first thing I found out is that ginger can be peeled with a spoon. It was simple and there was no danger of cutting my fingers. The next thing I learned is that ginger can be blitzed in the food processor. I froze the peeled pieces for a few hours, put them in my food processor for a few seconds, and voilĂ , chopped fresh ginger to bake this:


It was delicious. This is not my grandmother's gingerbread, but a strong ginger cake. It was great with whipped cream
and I think it would be equally tasty with some vanilla ice cream.

  1. That sounds amazing! I sometimes wonder how much time we spent doing things before there was the internet to show us faster hacks for doing it. Peeling ginger with a spoon -- who knew?!

  3. Thanks for the recipe. I made one yesterday too. Had to use a tube pan because I didn't have another cake pan big enough. This is the first cake I've ever made that you didn't start creaming butter & sugar, then add the eggs. And the boiling water and baking soda had me intrigued. It was for dh's birthday dinner, so we had it with butter pecan ice cream. Tasty!

  5. Oh, that looks SO TASTY, Bonny! And what a helpful tip about the ginger. I actually avoid recipes when I would need to peel ginger. That trick will open new possibilities for me!

    1. I was surprised at how different this tasted from traditional gingerbread made with powdered ginger. I really like it but John doesn't so I may be sharing Election Day ginger cake with my neighbors!

  7. YUM!!! That looks amazing Bonny. I had read about peeling ginger with a spoon, but I've never had a bad time using a knife...I may try the spoon trick though. And, I've heard of folks peeling ginger (lots of it) and then storing it in zip bags in the freezer. I may start doing that!

  9. The cake indeed looks delicious. I know it's not the most environmentally friendly packaging (all right - it's down right full of plastic) but I sometimes buy a package of frozen grated ginger cubes in the grocery store. This time of year I make a few things that call for grated ginger. One is a red lentil curry.
