Dinner and Dessert

Sometimes I'm at a loss about what to make for dinner, but I found this recipe and it's a keeper. I made it for John and I and we liked it enough that I made it the next week to take to Justin's. Now that I'm writing about it, I might just make it again this weekend.

I could eat lots of things with a garlic cream sauce.

I used a pound of pasta, half a pound of bacon, half and half in place of heavy cream, and an extra tablespoon or two of ranch seasoning, and it still all fit into a 9 x 13 pan. 

Since this dinner was a good one, a delicious but not too sweet dessert made it even better. I had almost a full five-pound bag of self-rising flour in the cupboard and King Arthur was kind enough to provide a peanut butter cookie recipe when I decided I needed to use it up. This recipe only uses one cup of flour but I will certainly make it again in the future.

It's quick and easy to mix and make and I got 18 cookies when I baked them. This is probably still more cookies than two people need, but we managed to eat them in short order. 

I'm a selfish baker; the big cookie is for me!

  1. I also made cookies this week just because (well, because we had butter that was about to reach its sell-by date, and I hate to waste food), and it's nice to have a treat for no special reason. I ended up with three dozen, so I put most of them in the freezer.

  4. I have made that chicken-bacon-ranch casserole several times (my recipe is slightly different...no cream cheese) and it is a winner for sure. And...it freezes well! And now I want a cookie.....

  6. I HATE figuring out what to make for dinner anymore. I could just have a sandwich but The Mister really looks forward to a big ole meal every night. "What's for dinner" are usually the first words out of his mouth every morning.

    1. It's exactly the same here! I would be happy with salad, cereal, or a sandwich, but John likes meat, potatoes, and a vegetable. Tonight he's getting tortellini and string beans and I may take the weekend off!

    1. I should have mentioned that I had cookies ready to eat in 45 minutes or so. I only chilled mine for 20 minutes and they were fine.

  8. You found a good solution to the "What's for dinner?" dilemma. The cookie recipe looks great - simple and delicious. Eighteen cookies sounds like a nice amount for two.

  9. Oooh, that casserole sounds like a winner and I think Jackie would like it, too. I made a guiness stout chocolate cake yesterday and today I'm making a traditional corned beef and cabbage dinner.

  10. Oooh, I love peanut butter cookies!! I've been stymied by Rusty's preference not to have gluten -- so many good, quick, and easy "what's for dinner?" recipes use pasta (which I love). It's hard to make a casserole that's part regular & part gluten-free.

  11. I printed out that recipe because it sounded so good! My book group is meeting at my house next month -- guess what I will serve them!
