What's for Dinner?

This dinner was a winner! I don't know what to call it, but it was easy, satisfying, and everyone in the family liked it. I have very few dinners like this so I had to take a picture and tell you about it. 


I diced three chicken breasts, cooked them, and threw them in the crockpot. I added three cans of drained black beans, a large bag of frozen corn, some salsa, an envelope of taco seasoning, and let it cook all day. I had flour tortillas, so Justin put some of the chicken mixture on them, added Mexican cheese and hot taco sauce, and proclaimed it delicious. I also added cheese and scooped it out of my bowl with some hint of lime taco chips. John ate his over rice and was happy that it wasn't too spicy.

I'm going to have to resist the temptation to make this every week, but I thought it was pretty darn good and there are even some leftovers for me to eat with more taco chips.

  1. Oh, that sounds very tasty! (We're having leftovers tonight . . . from the "burrito bowls" I made on Tuesday.) :-)

  2. I think I'd call that chili! It sounds good, though certain members of my family would object to the beans (more beans for me, then!). I have a board meeting at 7 tonight, so we're going with an easy dinner that everyone likes: grilled cheese and tomato soup.

  3. Thanks for the inspiration, Bonny! One of my favorite combos is black beans, corn, and salsa, so I am definitely going to make this soon. I have never thought about adding chicken. I wonder how it would taste with some pork? It's so gratifying when you are able to make something that everyone likes. Why not make it every week? Happy Thursday!

  6. Oh YUM!!! This looks and sounds delicious Bonny - I'll be making this soon for sure. Tonight we are having asparagus wrapped in prosciutto and then broiled and some home-made bread to go with that. I think I will roast some cherry tomatoes too.

  11. Last night was salad and tonight it's Friday Night, which means "new food that we eat at the table". Roasted chicken and broccoli. I applaud you for consistently preparing tasty, interesting, and nourishing food for your people. any chance John might take up an interest in cooking? Not sure if it was COVID or retirement, but now Marc cooks most of our dinners.

  13. Crock pot meals are so nice. Yours sounds as if there was something for everyone - perfect. We had leftover soup (Tuscan White Bean with Farro). I tried a new recipe and it is average. It was warm and filling but nothing to shout about. However, nothing ventured, nothing gained and the leftovers were nice.

  14. That sounds like a winner to me! I’m a big fan of beans and corn in general as it’s always so satisfying and I feel good about all the fiber. It reminds me of a turkey chili I make whenever I have leftovers. Crockpot cooking is a bonus!

    1. I may have made too much as we're still eating this! Tomorrow is supposed to be quite warm so it might be time for something on the grill.
