Three on Thursday

I'm joining Carole and friends for Three on Thursday, today with three other things I did in Colorado (besides shop at The Loopy Ewe). 

Baked Ryan's birthday cake




I had looked forward to doing this, but Ryan also likes to bake. He rarely gets to do it because he lives by himself, so I let him enjoy making his own cake. He used my MiL's chocolate cake recipe, one we both recall with love and happy memories.
(Yes, he also collects blue bottles, so far only on his kitchen counter.)

Had a delightful birthday dinner at The Welsh Rabbit (our favorite charcuterie)

Hiked at Reservoir Ridge




We went out for a hike at one of Fort Collins' parks on this beautiful 78-degree day, the day before it dropped 60 degrees and snowed. Quite a contrast! It's a nice, steady uphill hike, and if we keep our eyes peeled we can even find lead balls buried in the trail

  2. Ditto on the dashing! I'm just about an hour from Ft Collins...I really think it's one of the best towns in Colorado. How fun for you that you got to experience our first snow of the season. Cozy, wasn't it! But glad you got the hike in first!!

  3. Best modeling of a Hitchhiker ever! And that food... wow. It looks so good! Those Colorado skies look pretty amazing but the best photo of all is the birthday boy with his cake! It just proves that you are never too old to love a birthday cake baked by your mom!

  11. That chocolate cake looks so moist and yummy! I love blue bottles, but don't know where to find them. That charcuterie platter is the best looking one I've seen! How wonderful to have a place to get one! And, thank you for pointing out the Hitchhiker! I couldn't make out what you had in your hands, but they certainly look like lead balls (once you told me).

  12. Loved the photos but the last one is quite interesting! I have never found anything like that ever. I have frequently looked for arrowheads where they are found often and came up empty. Glad you were with him!!
