Now that fall has arrived (for maybe the third time), our temperatures seem to have dropped from the 70s, skipped the 60s, and settled in the 50s. That calls for soup!
I had leftover ham, so I decided to try Slow Cooker Ham and Potato Soup.
There is a lot of peeling and chopping, but it goes quickly enough with Wait Wait ... Don't Tell Me! on the radio.
Just dump it all in the crockpot, and voilĂ , it's soup in six or seven hours. I used only half an onion, fat free half & half instead of heavy cream because that's what I had, and skipped the sour cream because I didn't have any, but it worked out fine. When I tasted the soup before dishing it out, it still needed something, so I threw in a handful (or maybe two) of grated white cheddar cheese, and then it was perfect.
John had two bowls, and I've got plenty to share with my mother-in-law. Soup's on!
Soup is one of the easiest things to make without a recipe or by adjusting a favorite recipe. Your soup not only sounds delicious, it is a perfect meal for colder days. You've inspired me to put the soup on tonight!

ReplyDeleteI love soup and so does my husband but not the same kinds (boo). So I make what I like and freeze the leftovers for lunches or when he is working late.

ReplyDeleteOh my gosh, I'm so hungry right now!! That sounds so warm and yummy. We skipped right over the 60s this fall, too (seems we sail through that part in the spring, too). I'm hoping to try a lentil soup in the Instant Pot tonight or tomorrow.
